ROOF on theWit Unveils New Seasonal Spring Menu
ROOF on theWit, the award-winning sky-high rooftop, perched on the 27th floor of theWit Hotel at 201 N State Street, has launched a new seasonal spring menu. The Mediterranean-inspired dishes from Executive Chef Nathan Sears feature both small and large plates, along with sweet bites from highly-acclaimed Executive Pastry Chef Toni Roberts.
Chef Sears introduces his latest spring innovations featuring a selection of 15 new and vibrant small plates including Grilled Eggplant + Goat Cheese Toast, served with pomegranate, smoked orange, and carrot on sourdough, Grilled Baby Octopus + Green Papaya with smoky puree, ramp vinaigrette, pistachio and trout roe, and Steak Tartare with black walnut vinaigrette, Spanish aioli, neonata, egg yolk jam and grilled sourdough. Guests can also choose classic options like the Crispy Fried Chicken with garlic and mint raita and Aleppo pepper chimichurri, or the Poached Pear + Goat Cheese Flatbread which features a caramelized shallot sauce, hazelnuts, rosemary, and cardamom.
In addition to Chef's seasonal paellas, guests looking for a meatier meal can choose from a selection of dishes including the 8oz Local Dry Aged Striploin with curried cauliflower puree, charcuterie xo, braised baby carrots and a spiced beef jus, as well as the Spanish "5J" Iberico Paleta Bellota that combines stewed figs, olives, pickled mustard seeds and grissini.
To end the night, guests can enjoy a selection of sweet treats including the Seasonal Macaron Flight or a Coconut Turmeric Sundae that blends bunuelos and honey roasted strawberries with a unique black pepper whipped cream.
